  4. Place on a baking tray. Place in the oven, at 170 degrees on the grill setting. Toast focaccia bread and filling until the mozzarella cheese has melted and the tomatoes have grilled.
  5. Remove from the oven. Transfer onto a plate. Place one half of the panini on top of the other. Serve and eat immediately while hot (cut sandwich in half to make it easier to eat, optional).

Sprinkle evenly over dough; drizzle with any accumulated juices from bowl. Layer on all the cheeses, splitting measurements between the two focaccias. Sprinkle crushed cracker topping over the top of each focaccia. Since traditional focaccia is made with lots of olive oil, the flavor-infused olive oil from the tomatoes is a great choice. Top with basil (I used fresh but dried is okay), cheese, and bake until the bread is cooked through and the cheese is melted and golden.
