Add candied fruits, raisins and almonds; toss together to coat fruit with dry ingredients. Beat butter in another bowl until creamy. Add sugar; continue beating until mixture is light and fluffy. Gradually stir in fruit mixture until well mixed.

Add the vanilla, eggs and sour cream and beat together. In a separate bowl sift together the flour, salt, baking powder and baking soda. My light fruit cake recipe is made with the creaming method, similar to my upside-down plum cake recipe. You take the butter and sugar and beat it till pale and creamy.

Instructions to make Light fruit Cake:
  1. Separate the egg whites from the yolks; beat the egg whites till you have stiff peaks
  2. In a separate bowl beat the egg yolks, add the melted margarine and sugar
  3. Fold in the flour in batches, alternating with milk, till you get your desired consistency.
  4. Fold in the egg whites, till well incorporated
  5. In a small bowl add a pinch of flour and add the fruits make sure they are well coated
  6. Fold in the coated fruits and pour the batter into a greased tin…
  7. Pre heat the oven at 150° for 10-15minns. Bake your cake @150° for 50mins

My light fruit cake recipe is made with the creaming method, similar to my upside-down plum cake recipe. You take the butter and sugar and beat it till pale and creamy. Next, you're going to add in the ground almonds and beat well again. Adding the almonds at this stage significantly reduces the risk of your cake batter curdling. If you don't like fruit cake, this light fruit cake recipe may change your mind.
