Brush the warm cake with rum or brandy. In another bowl, cream shortening and sugar until light and fluffy.   1. Sieve all the dry ingredients and keep aside..
  2. Beat sugar and butter till light and fluffy..(it should be pale yellow in colour)
  3. Add eggs to the batter one at a time and beat..
  4. Fold in the dry ingredients slowly in batches (using cut and fold method)
  5. Sprinkle little flour to the dry Fruits and gently mix it in the cake batter
  6. Finally add vanilla and pour the mixture in a greased cake tin lined with parchment paper
  7. Preheat the oven@180°for 10mins.
  8. Put the cake tin in the preheated oven and bake for about 25mins.
  9. The cake is done if a toothpick inserted in the middle of the cake comes out clean or if touched the cake springs back.
