  1. Beat on a high speed the eggs, sugar and vanilla together until it becomes pale and increases in volume.
  2. Lower the speed and add the remaining ingredients in the given order.
  3. Grease three small pans and distribute the batter evenly. Bake for around 30 mins on 175 *c
  4. For the cream cheese whisk the butter until it becomes lighter then add the cream cheese and whisk till light and fluffy. Then add the icing sugar and vanilla and whisk until combined.
  5. Chop up the apples. Add brown sugar to the bottom of a pan and add in the apples and stir. Add more sugar or honey and cinnamon to taste. Cook until apples are soft then set aside.
  6. Allow cake to cool completely (recommend wrapping in cling film after slightly cooled and refrigerating) before piping a ring of cream cheese around the outside of the cake layer then filling with the apple.
  7. Crumb coat with the remaining Frosting and place into the fridge. If you wish to decorate.
  8. Make a batch of buttercream by whisking together the butter until light then adding icing sugar tasting occasionally to see how much icing sugar you need.
  9. Melt chocolate. on parchment paper draw out desired shapes turn over and pipe the chocolate on to them.
