  8. Make ready 450 ml Buttermilk
  9. Get 2 tsp Salt
  10. Prepare 2 tsp Garlic powder
  11. Get 1 tsp Cayenne Pepper
  12. Make ready For the Dredge:
  13. Take 250 g Plain Flour
  14. Get 1.5 tsp Salt
  15. Prepare 1 tsp Garlic Powder
  16. Prepare 1 tsp Smoked Paprika
  17. Make ready 1 tsp Cayenne Pepper
  18. Prepare 0.5 tsp Red Chilli Powder
  19. Make ready 0.5 tsp Black Pepper
  20. Make ready 1.5 tbsp Crushed Cornflakes
Instructions to make Chicken Fillet Burgers:
  1. Cut the Chicken to Burger size. Then marinade it in the buttermilk mixture comprised of the salt, garlic powder and cayenne pepper. Best to marinade in the fridge overnight. If you can't get buttermilk, just get regular full fat milk and add half a lemon's juice, mix thoroughly and leave to stand for 10-15 minutes.
  2. Mix all the ingredients to make the dredge. You can increase the spices if you want it more spicy.lift a chicken piece and place it in the dredge. Cover in completely and press the flour on hard. Then take the chicken, shake off the excess flour and place to the side. If you want extra crispy bits, then drizzle some of the buttermilk mixture into the flour mixture and mix it in.
  3. Heat up your oil and make sure it is a couple of inches high. Once heated keep the temperature on medium-low and place the chicken in. Don't overcrowd the pan. Let the chicken cook for 5-10 minutes until golden brown.
  4. Toast your Brioche buns. Always.
  5. Thinly slice your lettuce. Mix together mayonnaise and chilli sauce along with the lettuce.
  6. Assemble you burger however you like. I prefer bun, lettuce mix, chicken, pickles and then bun.
  7. Serve with Chips and Enjoy!
