As always I recommend making this recipe exactly as written, but here are a few possible substitutions: Whole Wheat Flour: You can substitute the whole wheat flour with all-purpose flour, however I highly recommend using whole wheat for the added nutritional benefits and taste! You start by dissolving some yeast and water and then slowly add in some flour, salt, barley malt syrup (or honey), and olive oil. Once the mixture is combined you then want to knead it until it becomes a light fluffy dough. Classically, focaccia is shaped into large rounds.

Instructions to make Fluffy Whole Wheat Focaccia:
  1. Knead together all the ingredients except those marked with the ○ and the shortening. Once it gathers together, knead the shortening into the dough.
  2. Make into a neat ball and let rise until it doubles in size.
  3. Divide into four pieces and roll into balls. Let rest for 15 minutes.
  4. Roll the dough out to 10cm diameter disks and allow to rise (2nd rising).
  5. Poke holes in the tops with your fingers, coat with olive oil, and sprinkle with rock salt.
  6. Bake in an oven preheated to 220°C for 13 minutes. The first time, try making a plain version.
  7. With cheese and tomato!

Once the mixture is combined you then want to knead it until it becomes a light fluffy dough. Classically, focaccia is shaped into large rounds. For this focaccia, bake the dough in a rectangle baking sheet. Serve easy whole wheat rosemary focaccia as a snack, as table bread with meals, with soups, salads, and with antipasto platters.
