This spicy, healthy, vegan Moroccan Butternut Squash Stew is packed full of squash, chickpeas, spinach, and warm spices. Who says you need to only have salads to eat healthy (and who wants to eat them when it's cold outside?)? I keep seeing so many salads out there for healthy recipes for. Combining squash and salads isn't new to me since I absolutely love roasted butternut squash pieces in a salad.

  1. Get Medium butternut squash (1kg)
  2. Take 2-3 red onions
  3. Make ready 2 tbsp olive oil
  4. Get 1 tbsp red wine vinegar
  5. Make ready Salt
  6. Prepare Pepper
  7. Get 4 tsp smoked paprika
  8. Make ready 2 x 400g tins of chickpeas
  9. Prepare 200 g spinach

I used half of a leftover butternut squash that I peeled and sliced. The squash and chickpeas weren't crispy, so I suspect I should've dried the chickpeas with a towel after draining, mixed them with oil in a separate bowl to make sure. It's light but so full of flavour. Perfect for those Summer evenings, I hope you all enjoy it! .

Steps to make Squash, spinach and chickpea salad:
  1. Wash, deseed and roughly chop the squash. Chop the red onions into thick slices. Add these to 1 or 2 roasting tins, ensuring they are in a single layer. Mix with the oil and vinegar, salt, pepper and paprika.
  2. Place into a preheated oven (180degC) for 20 mins.
  3. Add the chickpea and a little more seasoning if you like and return to the oven for another 20 mins.
  4. Scatter the roasted veggies over a bed of washed spinach. Drizzle with a little more olive oil and red vinegar.

It's light but so full of flavour. Perfect for those Summer evenings, I hope you all enjoy it! . Currants add a surprising touch of sweetness to this simple sauté of chickpeas, spinach, squash and gnocchi. We prefer the texture of shelf-stable gnocchi, but if sodium is an issue for you, opt for frozen instead. Butternut Squash and Chickpea "Salad", there's no messing around with loads of pointless and tasteless iceberg lettuce.
