  7. Take 1 cup- Parmesan, shredded
  8. Take 1-2 tsp- olive oil
  9. Get to taste Salt & pepper

This turkey stir-fry recipe is such a tasty way to use up leftover turkey. It's VERY simple to make This delicious stir-fry is one of my most requested leftover turkey recipes. Cook the frozen veggies, garlic and ginger in avocado oil. Then add the cooked turkey meat.

Steps to make Turkey Pesto Veggie Stir Fry:
  1. In a large sauté pan, heat olive oil over medium heat and add chopped onions. Cook for 3-5 minutes, stirring occasionally.
  2. Add turkey. Continue stirring and separating chunks of turkey. (~5 min)
  3. Before turkey is fully cooked, add sliced zucchini. Mix well to ensure zucchini is properly exposed to the heat. Sprinkle salt & pepper as desired.
  4. In a separate skillet, begin heating broccoli and red peppers over medium heat. (~3-5 min)
  5. When broccoli and peppers are nearly cooked, combine with the turkey & onions mixture.
  6. Food should be ready when the zucchini is softened and broccoli has a soft crunch. Mix in the pesto and parmesan cheese! Serves 4-6.

Cook the frozen veggies, garlic and ginger in avocado oil. Then add the cooked turkey meat. Add the spring onions, pepper, carrot, celery and mushrooms. The vegetables should remain crisp and crunchy. Add turkey and stir to coat.
