This Vegan Pad Thai is a perfect weeknight dinner! Traditional Pad Thai noodles are relatively wide - more of like a fettucine vs. a spagetti - which gives us more surface area for our yummy sauce! I've had Vegan Pad Thai on my list of recipes to create for probably a year now. It took me a couple of tries to get it just right, so we have had a lot of noodles to eat at my house the last few weeks!

The ingredients needed to make Vegan Pad Thai Sauce:
  1. Take 4 tablespoon Tamarind Paste
  2. Take 6 tablespoon Dark soft brown sugar
  3. Get 2 tablespoon Rapeseed oil
  4. Get 1 teaspoon Garlic granule
  5. Take 1 teaspoon Soy sauce
  6. Take 1/2 teaspoon Salt
  7. Make ready 1 pinch Chilli flake

Vegan pad thai is one of my favourite things to eat and luckily for vegans, it is rather easy to veganise. Pad Thai is one of these dishes that is not that difficult to veganise. I used a colourful array of crunchy veg in my version, but golden-fried tofu cubes would be great addition too. To serve, plate with additional garnishes such as lime wedges.

Instructions to make Vegan Pad Thai Sauce:
  1. Heat the rapeseed oil in the saucepan.
  2. Add the Tamarind paste, dark soft brown sugar, garlic granule, soy sauce, salt and chilli flake.
  3. Gently heat and stir until the sauce bubbling up and sugar dissolved. Keep stirring as the sauce is easily get burnt.
  4. Pour the sauce in a sterilised jar. Leave it to cool and refrigerated and used within 1 week.

I used a colourful array of crunchy veg in my version, but golden-fried tofu cubes would be great addition too. To serve, plate with additional garnishes such as lime wedges. Make the sauce: in a small saucepan over medium-high heat, whisk together the rice vinegar, soy sauce, brown sugar, Worcestershire sauce, and tamarind paste. This Vegan Pad Thai with Thai Peanut Sauce packs a punch with colorful veggies including sweet potato noodles, red peppers, pea pods, red onions and tossed with a delicious Thai peanut sauce. Top with toasted quinoa and you're off to enjoy a delicious vegan meal!
