  1. Slice de-seeded pepper into slices. Slice courgette into rounds and spring onion into thin slices.
  2. Add onions and oil to a pan and fry gently for 1 minute. Add peppers and courgette. Cook until slightly softened.
  3. Cut puff pastry into individual-sized pieces. Spread with passata. Top with cooked veggies and spring onion and cook for 12-15 minutes at 180C until the pastry is puffed up and golden. Enjoy.
