  1. For dough mix rice flour,all purpose flour,warm water and salt.and make fine smooth dough and keep aside.
  2. Wash the overnight soaked green moong,and grind it to a fine paste. And keep ready.
  3. Meanwhile,prepare the ingredients given for stuffing. Heat the oil in a karhai,and temper mustard seeds,hing,add the chopped onions till it's change colour.add turmeric powder and saute for a while,then add the chopped tomatoes,paste green moong,and stir for a min till it's turn soft. Next add all the masala given for stuffing.continiues stirring And cook for 10 mins adding little bit of water to avoid getting sticky. Switch off the flame when it's done.
  4. Prepare the rice dumplings out of the rice dough.applying little bit of water in hands to make a flat round shape using hand,fill the moong stuffing inside and give it your own shape and size cover gently from all the edges as rice is very soft and delicate.But mixing wheat flour or any other flour help gently to well set.
  5. Fill half the water in a a steamer container wipe with the cotton cloth and apply a little bit of oil and let it boil for a min.Put the prepared dumpling inside the steamer and steam for about 20 mins in a medium flame.
  6. Check in between and flip on both the side upside down to get well steamed and cooked.switch off the flame and serve it in plate.Heat 1 teaspoon of veg oil in a pan temper the mustard seeds and red chillies. Garnish it with onion leaves And sprinkle over the dumpling plate and serve hot with tea.

Generally these Idlies are served with spicy Idly podi (mixture of blended dry spices) served with melted Ghee or gingely oil, mildly spiced coconut chutney and Sambar (vegetable lentil soup). Nuchinna unde (nucchu - broken bits ; unde - ball) is basically steamed lentil dumplings which tastes almost like steamed masala vada / ambode. These dumplings are usually made using tuvar dal, however you can add little chana dal too as i have done. Grease a pan or steaming plate with oil or ghee and place the dumplings in it. Serve hot with coconut chutney or Hasi Majjige.
