The ingredients needed to make Stuffing Giardenera:
  1. Take 1 old foccacia loaf; cubed
  2. Get 1/4 C black olives
  3. Prepare 1/4 red onion; julienne
  4. Take 8 pepperoncini; sliced in thirds
  5. Prepare 1 T giardenera relish
  6. Get 1 C chicken stock

I absolutely love Giardiniera, but stop buying it years ago because of all of the 'extra' ingredients you find in processed foods. I have searched for and made other recipes for this, but THIS is the recipe! I will never be without a container of this in my frig., it's seriously great. Serve giardiniera with a wide range of foods; it makes an excellent cheese platter garnish.

Instructions to make Stuffing Giardenera:
  1. Combine all ingredients in a small casserole dish. Cover. Bake at 350° for 20 minutes. Uncover. Cook for approximately 15 more minutes or until stuffing is slightly crispy and caramelized but not dried out.
  2. Variations; Basil, parsely, bell peppers, jalapeños, paprika, shallots, celery, bacon, oregano, marjoram, parmesean, pickled veggies, sourdough, garlic, cilantro, scallions, yellow onion, squash, zucchini, romano, gruyere, spinach, arugula, peppadew, green olives

I will never be without a container of this in my frig., it's seriously great. Serve giardiniera with a wide range of foods; it makes an excellent cheese platter garnish. It cuts the richness of winter stews, sausages, and roasts. I love it with eggs, especially cheese frittatas and runny poached or fried eggs. I also like to chop it finely and use it as a stuffing for hard-boiled eggs.
