Kamonanban is a Japanese dish prepared with soba noodles in a broth flavored with duck meat, leeks, green onions, and a savory-sweet sauce. Mix the ginger, soy sauce and sweet thai chili sauce together in a small bowl. Drain the soba noodles and add to the skillet with the onion and leek mixture. Pour the soy mixture on top and toss to coat all the noodles.

  5. Dredge the duck with kudzu starch.
  6. Cook the frozen soba noodles. Put the dashi stock and bring to a boil. Add the ○ ingredients and the prepared duck. After the duck is cooked through, add the leek and simmer quickly.
  7. Transfer the soba noodles first into serving bowls. Pour the dashi soup and top with the duck and leeks. Garnish with chopped spring onion. Sprinkle with ichimi or shichimi spice.

Drain the soba noodles and add to the skillet with the onion and leek mixture. Pour the soy mixture on top and toss to coat all the noodles.
